Festive Orange & Cranberry Muffins recipe

These sweet and tangy muffins made with fresh cranberries are delicious, but I could only find the recipe in US imperial units. So here's my interpretation in metric / British units.

Orange & Cranberry Muffins

Ingredients, in order of use. Makes 12 muffins.


170g / 6oz butter
170g / 6oz sugar

3 medium eggs

170g / 6oz flour
1-2 tsps baking powder

Zest of 3 oranges (or clemantines for a Christmassy alternative)
100ml orange juice (include juice of the zested oranges)

170g / 6oz roughly chopped cranberries
2 tsp each of cinamon, all spice, ground ginger
1/2 tsp nutmeg
1 tsp vanilla essence

Steps


1. Pre-heat the oven to ~200 deg C / Gas Mark 5-6
2. Cream together the butter and sugar.
3. Break in the eggs and mix.
4. Add the flour and baking powder. Mix again.
5. Throw in everything else, mix, and pour into muffin cases.
6. Bake for 20 mins at 200C / Gas Mark 5-6.

Voila - very tasty!

A modification comes to mind to use up left-over Christmas cranberry sauce -- use the sauce in place of fresh cranberries, reduce the sugar to 4 oz, and if necessary use less orange juice to avoid it going too sloppy.
